Master Zhang has honed his Tieguanyin cultivation techniques and finishing process over forty years of experimentation, earning the respect of the entire Daping area as a teacher and community leader. He utilizes organic farming techniques, encourages biodiversity, and advocates against wasteful irrigation to encourage healthy and deeply complex and nuanced tea. This modern green style Tieguanyin requires an intense turning and fluffing process in finishing that needs to be adapted on the spot depending on the weather and the aroma, requiring deep experience.

Tieguanyin, or Iron Goddess of Mercy is one of the most famous oolong teas in the world. The Tieguanyin varieties has been growing in Anxi for hundreds of years, and Master Zhang still cultivates true Tieguanyin varieties on his high elevation plot high above Daping Village. While the older style of Tieguanyin was partially fired and oxidized, this modern style Tieguanyin is green, vibrant and intensely sweet and floral. Master Zhang’s meticulous 30+ hour hand-finishing process brings out rich deep florals and creamy texture from this tea. He has devoted his life to refining organic farming techniques and utilizes clean sustainable farming. His. Much Tieguanyin sold outside China is a mix of other varietals like Benshan and Huang Jin Gui that are more immediately aromatic without as much coaxing. Master Zhang uses true Tieguanyin, and unlike many producers, he finishes and rolls his oolong entirely by hand. This green modern oolong is a perfect bridge into the complexity of oolong teas for people used to the light subtlety of green teas looking for something thrilling, and the autumn harvest provides delicious seasonaility with more creamy body, background spice, and mellow florals
