Master Zhang excels at finishing his traditional Tieguanyin. He works in a way to brings out the florals and strengthen them, allowing the green quality of the tea to shine through while providing a sweet and nuanced counterbalance through delicate roasting. This is the tea that Master Zhang grew up with and his greatest passion. The mist shaded mountain air and sweet spring water make this true Tieguanyin varietal tea even more nuanced.

The iconic Tieguanyin or Iron Goddess of Mercy is one of the best introductions to what makes Chinese tea so great. Master Zhang grows his Tieguanyin varietal tea on his high elevation plot high above Daping Village in Anxi. He has devoted his life to refining organic farming techniques and utilizes clean sustainable farming. His meticulous 30+ hour hand-finishing process brings out rich deep florals and creamy texture from this tea. Much Tieguanyin sold outside China is a mix of other varietals like Benshan and Huang Jin Gui that are more immediately aromatic without as much coaxing. Master Zhang uses true Tieguanyin, and unlike many producers, he finishes and rolls his oolong entirely by hand. This tea is fantastic to watch brew, as the little ball-shaped leaves expand into giant perfect leaves, filling the whole teapot. The balanced finish and careful processing make this tea impossible to oversteep.
